Hey Louise, really enjoying this blog... can only stop by here with a full belly as the sight of these dishes sends my gastric juices into overdrive. Mouth watering stuff. My suggestion of the day is take a trip to Tang Frères... buying raw curcuma (it's fresher than what they sell in the indian stores; the roots are fatter and juicier) and green ginger is a must for any Thai curry fest. My 2 cents worth! Congrats on the blog - go n'eirith an bothair leat!

Wonderful post, Louise! Spice might be one of those things more inextricably tied to a culture than even the language. Wars have been fought and won and lost over it; whole new lands have been "discovered" because of the quest for spice. Thanks for bringing that idea back to the front of my mind.
